Cucumber and Celery Salad with Herbs

Cucumber Celery Salad

Sometimes, especially when I’m busy, the contents of my fridge starts to taunt me.  I open up the fridge to grab an apple, and there’s all that celery leftover from making soup (you know, when you really only needed a stalk or two, but had to buy the whole thing?). Or you know, when you see those leftover herbs that you originally purchased for only 2 tablespoons worth?  This sort of thing drives me mad! Well, here’s a sort of “clean out your veggie drawer” sort of salad that is healthy, refreshing, and will immediately stop the fridge taunting.

Celery and Cucumber Salad with Herbs

6 celery stalks
1 English cucumber (seedless cucumber), peeled, seeded and thinly sliced crosswise
1/3 cup cup coarsely chopped fresh flat-leaf parsley
1/4 cup coarsely chopped fresh mint
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground black pepper

Toss together celery, cucumber, parsley, mint and oil in a bowl.  Season to preference with salt and pepper.

What a snap!
