Turkey Tacos

So I’m not gonna lie to you — this isn’t exactly a glamorous recipe, however, I think you’ll be quite surprised by the results.  With ingredients on hand, you can prepare this in a flash! I mean, really, a flash, like 10 minutes. My mom traditionally made this with ground beef, which is delicious as well, but I lighten it up with the ground turkey.  My other detour from the original recipe is the addition of Sriracha sauce to the ground turkey and chili sauce mixture.  I’m in love with this sauce anyway, but in the case of these tacos, it transforms them from the simple to the divine.  You’ve gotta love spicy stuff though, so if not, simply leave the Sriracha out.

Fixings

Add sour cream, salsa fresca, cheese, and shredded lettuce . . . or whatever fixings you have on hand, and you have yourself quite the little treat!  This is really the answer to what to cook during a busy week.

Turkey Tacos with Sriracha Sauce
Adapted from my dear Mama June’s recipe

1 package ground turkey, lean or regular
1 package good-quality soft-taco flour tortillas
1 jar chili sauce (found in the ketchup aisle) – I use about ½ jar.
Sriracha, to taste (I use about 2 tablespoons)
Shredded lettuce
Sour Cream
Salsa Fresca or other favorite prepared salsa
Shredded Mexican-blend cheese
Guacamole (optional)

Using a non-stick skillet, place ground turkey in dry pan, breaking it up into small pieces with a fork or wooden spoon.

While turkey is cooking, get your taco fixings ready.

Cook turkey meat until nearly done, and then add ½ jar chili sauce, mixing well.  Add desired amount of Sriracha to taste and cook until turkey is done.

Meanwhile, place tortillas on a plate with a damp paper towel on top, and microwave for 30 seconds.

Construct tacos, and enjoy!!
